Meatless Monday: No-Bucks Pumpkin Spice Latte!

It’s that magical time of year. No, not Christmas, crazy, it’s the season of all things pumpkin. I’m a goner when it comes to pumpkin flavored foods. Pies, cakes, smoothies…I’ll take them all. And then, there is that addiction causing concoction that sparked panic last year over suspected shortages…yup, you guessed it…the Pumpkin Spice Latte! This recipe allows you to savor the sweet, fall flavor without leaving your house, coughing up $5, or most importantly, paying EXTRA to have soy milk. Bon Appe-drink!

Ingredients

  • 1 tbsp canned pumpkin
  • 1 cup of non-dairy milk (I used vanilla soy)
  • 2-3 tsp of sugar (or to taste)
  • 1 tsp of instant coffee, plus 1/2 cup of water (I use the Trader Joe’s brand, and I love it, but if you are a coffee “purist,” feel free to sub with 1/2 cup of strong coffee or espresso!)
  • 1/4 tsp of pumpkin pie spice (or a couple dashes each of cinnamon, nutmeg, ginger and cloves)
  • 1 tsp vanilla extract

Method

Step one: Combine all ingredients, except for vanilla, in a medium saucepan and whisk over medium heat until steaming hot.

Step two: Transfer mixture into a blender or bullet-type apparatus, add vanilla, and blend until frothy.

Step three: Carefully pour into a large mug and enjoy!
